Chia Berry Pudding
Berry Chia Pudding Serves 2
1 ¼ cup of almond, rice, cashew or coconut milk
3 pitted dates
½ tsp pure vanilla extract
¼ cup chia seeds
½ cup of mixed fruit of choice
Place the milk dates and vanilla into a blender or food processor and blend for 5 to 10 seconds. Take the milk mixture out and add to a bowl with the chia seeds. Stir well, cover with a lid or wrap and place in the refrigerator over for over night. When you are ready to eat add some blueberries or strawberries or other fruit of your choosing.
